Wine Dinner featuring Apollo's Praise

Join us for the first installment of Cordelia’s Fall Wine Dinner Series, celebrating the distinctive wines of New York’s Finger Lakes.

On Thursday, September 17, 2026 at 6:30pm, we welcome winemaker Kelby James Russell of Apollo’s Praise for an unforgettable evening exploring the region through its wines.

Chef Josh Hunt has created a five-course tasting menu showcasing the rich flavors of fall, with each course cooked over charcoal and thoughtfully paired with selections from Apollo’s Praise

1st:
Tuna Tartare | watermelon, radish, serrano, horseradish, sesame, rice cracker
Paired with: Apollo's Praise Dry Rosé of Cabernet Franc

2nd:
Lemon & Herb-Poached Shrimp | preserved lemon double cream, Iroquois corn fritter, basil oil, fresh herbs
Paired with: Apollo's Praise 'The Knoll' Riesling

3rd:
Potato "Risotto" | venison sausage, charred green onion relish, smoked butter, cheddar
Paired with: Apollo's Praise Chardonnay
 

4th:
Duck Breast | braised celery root, smoked cabbage, sour cherry reduction, pistachio
Paired with: Apollo's Praise 'Picardie' Cabernet Franc
 

CHEESE:
Firefly Farm Moo & Blue (Maryland) | Grafton Clothbound Cheddar (Vermont) | Caseificio dell’Alta Langa La Tur (Piedmont, Italy)
Served with peach mostarda, blackberry compote, and crackers
Paired with: Apollo's Praise Spätlese Riesling
